1. Paleo Banana Bread

  • Prep time: about 15 mins
  • Baking time: 45 mins
  • Makes 1 loaf which provides roughly 10 slices

Ingredients

  • 2 Bananas (medium ripe & mashed)Paleo Banana Bread
  • 2 Eggs (free range)
  • 1½ Cups almond flour
  • 1 Tsp vanilla essence
  • 1 Tsp baking powder (gluten free)
  • ½ Cup water
  • 1 Tsp cinnamon
  • 1 Pinch of salt
  • ¼ Cup agave syrup
  • Dried fruit & nuts chopped (optional)

Directions  

  • Preheat oven to 175°C (350°F)
  • Spray your loaf pan with cooking spray or wipe with coconut oil
  • Mix the dry ingredients (almond flour, cinnamon & baking powder) together in a bowl
  • Beat the two eggs in a bowl
  • Add the mashed banana, agave syrup, vanilla essence and whisk together until well incorporated
  • Add the chopped fruit & nuts (optional)
  • Pour the batter into the prepared pan.
  • Bake the banana bread for about 45 minutes or until brown and crispy around the edges.

2. Paleo Sandwich Bread

Ingredients

  • 6 Eggs (free range)
  • 6 Tbsp butter (organic) or coconut oil
  • ½ Tsp salt
  • 1 Tsp baking powder (gluten free)
  • 1 Tsp apple cider vinegar
  • 1 Tsp flax seeds
  • ½ Cup flax seed meal
  • 1/4 Cup melted coconut oil
  • 2 Tbsp honey
  • 3 Tbsp coconut flour

Directions

  • Paleo Sandwich Bread RecipePreheat oven to 175°C (350°F)
  • Spray your loaf pan with cooking spray or wipe with coconut oil & line with grease proof paper
  • In a large bowl, blend the butter, eggs, honey, coconut oil & apple cider vinegar
  • In a separate bowl combine the flax, coconut flour, baking powder & salt
  • Combine the dry ingredients with the wet & pour the mixture into the greased loaf pan and bake for 35 minutes or until crispy around the edges
  • After removing the pan from the oven allow it to cool & place on a wire rack to cool completely
  • You can then cut it into thin slices or store it in an airtight container for a few days at room temperature & then keep in the fridge.

3. Microwave Paleo Bread

  • Serving Size: 2
  • Number of Servings: 2

Ingredients

  • 1 Egg (free range)
  • ⅓ Cup almond flour
  • 1 Tbsp coconut flour  (or flax meal or chia bran)
  • ½ Tsp baking powder (gluten free)
  • ⅛ teaspoon salt
  • 2 ½ tablespoons ghee (or organic butter or coconut oil)

Directions

  • Grease a mug
  • Beat the egg
  • Melt the ghee (or butter or coconut oil)
  • Mix all the ingredients together with a whisk
  • Once mixed pour the mixture into mug or small bowl
  • Bake it in your microwave for 90 seconds on high
  • Allow it to cool for a few minutes and then scoop out of the mug cut into slices
